Ten minutes if you blitz it in a food processor, twelve if you chop by hand.
Ingredients (serves 6-8 as a sharing side)
- 4 flatbreads or naan
- Large bunch flat-leaf parsley (about 1 cup packed)
- 3 cloves garlic
- 2 tbsp fresh oregano leaves (or 1 tsp dried)
- 3 tbsp red wine vinegar
- 1/2 cup extra virgin olive oil
- 1/2 tsp chili flakes
- 1/2 tsp salt
- Black pepper to taste
Method
- Blitz parsley, garlic and oregano in a small food processor until roughly chopped – not completely smooth, you want some texture. Add the red wine vinegar, olive oil, chili flakes, salt and pepper and pulse a few more times to combine. Taste and adjust – it should be sharp, herby and bright. Add more vinegar if it needs lifting, more oil if it’s too acidic.
- Heat a griddle pan or dry frying pan over high heat. Grill the flatbreads for 1 to 2 minutes each side until charred lines appear and they puff slightly.
- Spread the chimichurri generously over the hot flatbreads, cut into strips and serve immediately alongside the rest of the spread.
