For the pumpkin banana bread
- 1/2 cup unsalted butter (113 g)
- 2 medium very ripe bananas, mashed, about 1 cup (225 to 240 g)
- 3/4 cup pumpkin puree, not pumpkin pie filling (180 g)
- 1/2 cup light brown sugar, packed (100 g)
- 1/4 cup granulated sugar (50 g)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream or full-fat Greek yogurt (60 g)
- 1 3/4 cups all-purpose flour (210 g)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon kosher salt
For the maple pecan streusel
- 1/2 cup all-purpose flour (60 g)
- 1/3 cup light brown sugar, packed (67 g)
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- 1/3 cup finely chopped pecans (35 to 40 g)
- 3 tablespoons cold unsalted butter, cubed (42 g)
- 1 tablespoon maple syrup
Method
- Prep the pan and oven
Preheat the oven to 350°F. Line a 9 x 5-inch loaf pan with parchment paper, leaving a little overhang so the loaf is easy to lift out later. - Brown the butter
Add the 1/2 cup butter to a small saucepan or skillet over medium heat. Let it melt, then continue cooking, swirling the pan now and then, until the butter foams and the milk solids turn golden brown and smell nutty. This usually takes 4 to 6 minutes.
Remove from the heat and let it cool for about 10 minutes. - Make the streusel
In a small bowl, stir together the flour, brown sugar, cinnamon, salt, and chopped pecans. Rub in the cold butter with your fingertips or a fork until you have crumbly clumps. Drizzle in the maple syrup and toss again until the mixture forms slightly damp clusters. Put it in the fridge while you make the batter. - Mix the wet ingredients
In a large bowl, whisk together the mashed bananas, pumpkin puree, brown sugar, granulated sugar, eggs, vanilla, and sour cream or Greek yogurt. Whisk in the slightly cooled browned butter, including the browned bits at the bottom of the pan. - Mix the dry ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt. - Make the batter
Add the dry ingredients to the wet ingredients and fold gently with a spatula just until no flour streaks remain. Do not overmix. - Top with streusel
Scrape the batter into the prepared loaf pan and smooth the top. Sprinkle the maple pecan streusel evenly over the batter, gently pressing the larger clusters in very lightly so they stick. - Bake
Bake for 55 to 65 minutes, or until a skewer inserted into the center comes out with a few moist crumbs but no wet batter. If the top is browning too quickly, loosely tent with foil for the last 15 minutes. - Cool
Let the loaf cool in the pan for 15 to 20 minutes, then lift it out and cool on a rack. It slices best once it has cooled properly.
Tips & Variations
- Use very ripe bananas. The blacker and softer, the better.
- Do not skip browning the butter. It is one of the main reasons this loaf tastes so good.
- Make it a little simpler by leaving off the streusel and sprinkling a few chopped pecans on top instead.
- Want more texture? Fold 1/2 cup chopped pecans into the batter as well.
- For a sweeter finish, drizzle cooled slices with a little maple glaze made from powdered sugar, maple syrup, and a splash of milk.
