10 Fancy-Looking Desserts That Are Way Easier Than They Look

Honestly, some of my favourite things to make are the ones where people assume I spent way longer than I did. There’s something a little bit satisfying about that – putting something on the table that looks like it came from a bakery and watching someone’s eyes go wide before you casually mention it took 25 minutes.

It takes a bit of time but none of it is difficult. The finished cake looks like something from a Japanese patisserie and tastes even better than it looks.

I make this every summer and it never gets old. No oven, no stress, and it’s honestly one of the most refreshing things you can put on a table when it’s warm outside. The layers of creamy lemon filling and soft cookies set up overnight in the fridge into something that’s almost between a cake and a trifle – light and bright and completely irresistible. Make it the day before you need it and it actually gets better as it chills. My kind of dessert entirely.
