- Butter the bread – Spread butter (or mayo) on one side of each bread slice.
- Layer the cheese – On the unbuttered side of one slice, add cheddar, fontina, and mozzarella evenly. Add any extras now.
- Heat the skillet – Place over medium-low heat and let it warm for even cooking.
- Toast the first side – Place sandwich buttered-side down in skillet. Press lightly with a spatula. Cook 3–4 minutes until golden.
- Flip once – Cook the second side 3–4 minutes until bread is golden and cheese is fully melted.
- Rest & slice – Transfer to cutting board, rest 1 minute, then slice for maximum cheese pull.
