Step 1: Cook & Prep the Spaghetti
- Cook spaghetti according to package instructions until al dente.
- Drain and let cool for 5 minutes, then toss with parmesan, mozzarella, garlic powder, black pepper, red pepper flakes, and eggs. The eggs will help bind the mixture together when cooking.
Step 2: Make the Homemade Marinara Sauce
- Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add crushed tomatoes, oregano, basil, salt, pepper, red pepper flakes, and sugar. Stir well.
- Simmer on low heat for 10-15 minutes, stirring occasionally.
- Stir in parmesan cheese, let it melt into the sauce, and remove from heat.
Step 3: Smash & Crisp the Spaghetti
- Heat a non-stick skillet or griddle over medium-high heat and add butter + olive oil.
- Take a handful of spaghetti mixture and place it on the skillet.
- Using a spatula, firmly press it down like a smashburger, spreading it into a thin layer.
- Cook for 3-4 minutes on one side until golden brown and crispy. Flip and cook for another 2-3 minutes.
- Repeat with the remaining spaghetti mixture.
Step 4: Serve & Dip!
- Arrange the crispy spaghetti patties on a serving plate.
- Serve with warm marinara sauce for dipping.
- Sprinkle with extra parmesan and fresh basil for the ultimate finishing touch.
