- Prepare the Ingredients: Chop the tomatoes and crack the eggs into a bowl, whisking them until combined.
- Cook the Tomatoes: Heat 1 tablespoon of oil in a pan over medium heat. Add the chopped tomatoes and sprinkle with salt and sugar. Sauté until the tomatoes are soft and start to break down, about 3-5 minutes.
- Scramble the Eggs: Push the tomatoes to one side of the pan. Add the remaining oil, then pour in the whisked eggs. Allow the eggs to set slightly before gently stirring them with the tomatoes until cooked through, about 2-3 minutes.
- Add Flavor: Pour in the soy sauce and mix everything together. Cook for another minute until everything is heated through.
- Garnish and Serve: Remove from heat and garnish with chopped green onions if desired. Serve hot with steamed rice.
