Step 1: Prepare the Potatoes
- Bring a pot of salted water to a boil. Add the potatoes and parboil for 5 minutes. Drain and pat dry.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Add the potatoes in a single layer (work in batches if needed). Cook for 4-5 minutes per side, until golden brown and crispy.
- Transfer the potatoes to a plate and set aside.
Step 2: Cook the Steak Bites
- Pat the steak cubes completely dry with paper towels (this helps them sear instead of steam).
- Season the steak with salt, pepper, garlic powder, and smoked paprika.
- Heat 1 tbsp olive oil in the same skillet over high heat.
- Add the steak in a single layer and sear for 1-2 minutes per side, until browned.
- Remove the steak from the pan and set aside (it will finish cooking in the sauce).
Step 3: Make the Garlic Butter Sauce
- Reduce the heat to medium-low. Add butter to the skillet.
- Once melted, stir in garlic, parsley, thyme, and red pepper flakes. Cook for 30 seconds, just until fragrant.
- Return the potatoes and steak to the pan, tossing everything in the garlic butter sauce.
- Let cook for 1-2 minutes more, then remove from heat.
Step 4: Serve and Enjoy!
- Sprinkle with extra fresh parsley and serve immediately. Pair with a side of steamed veggies or a fresh salad for a complete meal!

Storage and Reheating Tips
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
Reheating: Reheat in a hot skillet for the best texture, or microwave for 1-2 minutes (though the potatoes won’t be as crispy).
