This Matcha Mille Crêpe Cake is a show-stopping, multi-layered masterpiece made with soft, paper-thin matcha crêpes stacked between light, airy matcha-infused whipped cream. The earthy, slightly bitter flavor of matcha perfectly balances the sweetness of the cream, creating an elegant, visually stunning dessert that’s light yet indulgent.
In a large bowl, whisk together flour, matcha powder, sugar, and salt.
In a separate bowl, whisk eggs, milk, heavy cream, melted butter, and vanilla extract.
Gradually pour the wet ingredients into the dry, whisking until smooth.
Strain the batter through a fine-mesh sieve to remove lumps.
Cover and let the batter rest in the fridge for 1 hour (this helps create delicate crêpes).
Step 2: Cook the Matcha Crêpes
Heat a nonstick skillet or crêpe pan over medium-low heat. Lightly grease with butter.
Pour ¼ cup of batter into the pan, swirling to coat the surface evenly.
Cook for 60-90 seconds, until the edges lift slightly, then flip and cook for another 30 seconds.
Transfer to a plate and repeat until you have at least 20 crêpes. Let them cool completely.
Step 3: Make the Matcha Whipped Cream
In a large bowl, sift in matcha powder and mix with powdered sugar.
Pour in cold heavy cream and vanilla extract.
Whip with a hand mixer or stand mixer on medium-high speed until stiff peaks form.
Refrigerate until ready to use.
Step 4: Assemble the Mille Crêpe Cake
Place one crêpe on a serving plate. Spread a thin layer of matcha whipped cream evenly over the top.
Repeat, layering crêpes and cream until all crêpes are stacked.
Smooth the edges with a spatula and refrigerate for at least 2 hours to set.
Step 5: Decorate & Serve
Before serving, sift matcha powder over the top.
Optionally, garnish with white chocolate shavings or a drizzle.
Slice with a sharp knife, wiping between cuts for clean layers.
