Step 1: Make the Sweet Chili Slaw
- In a small bowl, mix cabbage, carrot, chili sauce, mayo (or yogurt), lime juice, and season with salt and pepper.
- Toss to combine. Chill in fridge until ready to assemble.
Step 2: Prep the Hot Honey
- In a small saucepan over low heat, combine honey, chili flakes, and vinegar.
- Heat gently for 2–3 minutes, stirring occasionally—don’t boil.
- Remove from heat and let infuse while you cook the halloumi.

Step 3: Cook the Halloumi
- Pat the halloumi slices dry with paper towels.
- Heat olive oil in a skillet over medium-high heat.
- Add halloumi slices and cook for 2–3 minutes per side until golden brown and crispy.
- Remove and set on paper towel to drain.
Step 4: Toast the Buns
- In the same skillet, melt butter and toast the inside of the slider buns for 1–2 minutes, until golden.
Step 5: Assemble the Sliders
- Spread a small spoonful of sweet chili slaw onto each bun base.
- Add a slice of crispy halloumi.
- Drizzle generously with warm hot honey.
- Top with extra slaw (optional) and the bun lid.
- Serve warm, with napkins—they’re delightfully messy!
