Step 1: Roast the Potatoes
Preheat oven to 400°F (200°C).
Toss halved baby potatoes with olive oil, salt, black pepper, and garlic powder in a bowl.
Spread on one side of a large oven-safe skillet or sheet pan.
Roast for 15 minutes while preparing the chicken.
Step 2: Sear the Chicken
Season chicken thighs (or breasts) with salt, pepper, and paprika.
Heat olive oil in a skillet over medium-high heat.
Sear the chicken for 3-4 minutes per side until golden brown (it will finish cooking in the oven).

In the same skillet, melt butter over medium heat.
