Step 1: Roast the Potatoes
- Preheat oven to 400°F (200°C).
- Toss halved baby potatoes with olive oil, salt, black pepper, and garlic powder in a bowl.
- Spread on one side of a large oven-safe skillet or sheet pan.
- Roast for 15 minutes while preparing the chicken.
Step 2: Sear the Chicken
- Season chicken thighs (or breasts) with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat.
